Chef ClaudeCertified Master Chef, Jean–Claude Seruga, leads the culinary talent on the ETSU campus.

Chef Seruga is one of 66 Certified Master Chefs (CMC) in the United States. The CMC level is the highest and most demanding level of achievement of all ACF certification levels – granted only after candidates pass an intensive eight-day test of culinary skills and knowledge. The culinary delights from Master Chef Seruga and his team will draw ETSU students, faculty, guests, friends and future students into The Market Place.

Featuring Freshly Baked Breads.

ETSU’s new breakfast station features made-to-order omelets and breakfast sandwiches, scrambled eggs, proteins of the day, hash browns, oatmeal with all of the toppings, grits, buttermilk biscuits, sausage gravy, hard boiled eggs and a starch of the day – even the heartiest appetite is sure to be satisfied.

Chef’s Table

Time-tested, authentic recipes from the world over will tempt ETSU students to embark on a voyage of delicious dining opportunities. From exotic Asian-inspired dishes to nouvelle West Coast cuisine to “create your own” dishes, the Chef’s Table will cater to each student’s favorite flavors. This action station will feature items like gumbo, risotto, fish tacos, as well as vegan and vegetarian creations. Chef’s Table will drive participation and student engagement as they watch their meals being created by the chefs with new EVO grills.

Daily Dish

A contemporary twist on the nostalgic, Daily Dish will offer authentic world dishes of restaurant quality. From comforting menu items from your new rotisserie oven to meatloaf that could rival Mom’s to Tikka Masala or a classic New England pot roast, students will find their favorites, accompanied by a wide variety of wholesome grains, starches and fresh vegetable sides. Whether country-fried, slow-cooked, mashed, braised, baked or scrambled, the offerings from this station will satisfy ETSU diners’ cravings for comfort-style entrées and breakfasts.

Simple Servings

Simple ServingsThe health and well-being of each campus community we serve is at the forefront of everything we do. This includes ensuring all of our constituents can be provided with a variety of delicious food options, regardless of food and allergen intolerances. That is the purpose of Sodexo’s award-winning Simple Servings station. For the growing number of students who arrive on college campuses with food allergies, celiac disease or gluten intolerance, choosing meals can present undue anxieties. If not properly supported, it can also be dangerous – even fatal. According to the Centers for Disease Control and Prevention, teenagers and young adults with food allergies are at the highest risk of fatal food-induced anaphylaxis, making it essential that properly prepared foods and clear information about their ingredients be accessible to ETSU students and guests at every meal. It is also very important that students properly communicate their needs, and we are confident they will soon become comfortable speaking directly to our chefs.

Simple Servings enables students to address food allergies or other dietary concerns without feeling singled out. Lunch and dinner menus change daily, offering an array of protein options (fin fish, beef, pork, chicken and turkey), as well as vegetarian dishes. The risk of cross-contamination is minimized too, because specially trained food service employees use only food, equipment, utensils and preparation/storage areas designated for Simple Servings.

Additionally, this station will use allergen-safe oils in cooking and preparing foods, such as coconut oil, olive oil, macadamia oil, avocado oil and the like.

Ignite: Campus Grill

Ignite LogoA Favorite for Meat Lovers and Vegetarians/Vegans Alike!

A favorite for meat lovers and vegetarians/vegans alike! From juicy, made-to-order burgers to grilled cheese and specialty sandwiches – like falafel served on flatbread with freshly prepared tzatziki sauce – to vegan burgers, quesadillas and hot dogs, the grill station will serve hot, fresh and delicious temptations. Students who find themselves short on time will appreciate the convenience offered by a selection of just-made hot burgers and sandwiches wrapped and ready for their grab-and-go convenience. Sauces to accompany these delicious grilled creations will be prepared daily and other favorites will include freshly-cut potato fries prepared in front of our customers at a new station, and grilled desserts like chocolate cherry pound cake.

My Kitchen/Student Kitchen

To add excitement to The Market Place, we propose to introduce My Kitchen – food education made fun! This program will introduce a unique interactive experience, combining the popularity of culinary education with the need to offer a sociable setting to encourage community on campus. My Kitchen will be a demonstration setting where our highly trained chefs can hold cooking demonstrations, cooking classes, etiquette education, or “Iron Chef-like” competitions, while students sit around the display kitchen and interact with the chefs, sample end results and participate in the entire show. We will also feature special events where students will participate and join in the cooking festivities. In addition, we will explore partnering with the campus cable network to broadcast the My Kitchen cooking shows.

The My Kitchen program not only gives us the opportunity to highlight the talented chefs we have on campus, but also allows us to nurture the growing trend to be connected to the food preparation and the desire to become educated in the subject of food products, equipment, culinary skills and much more. This program brings chefs, students and customers together to share in the culinary experience and partner in the passion. We will be happy to discuss this program with you, as well as with students, in the near future to determine how to best implement My Kitchen on campus. With the popularity of the concept, it could be an excellent opportunity to provide programming options to keep students on campus. The Student Kitchen will also feature Jamba Juice at every meal. Two flavors will be available as part of the residential meal plan and rotated every day.

Fired Up

Fired Up LogoFeaturing Homemade Sauces and Freshly made Pasta.

This modern Italian concept will be more than just a college-preferred pizza place – it will become an authentic Italian cuisine favorite for ETSU students. Fired Up features freshly baked specialty pizzas each day – like macaroni and cheese pizza or our Buffalo chicken pizza – along with a selection of old favorites – pepperoni and cheese, Margherita or vegan basil. The Pizza and Pasta will be made fresh in front of students every day from scratch in a displayed production area. We have added to the current equipment a scaling, mixing, and pasta machine for the rolling and forming of pasta. The pasta will be cooked in a new pasta cooker and sautéed to order in your student’s pasta dishes. Other tempting choices will include “Labretti” sandwiches, flatbread sandwiches, Stromboli, calzones and freshly baked bread sticks and garlic focaccia. Our chefs at Fired Up will also create delicious freshly-made pasta dishes and sauces including spaghetti, tortellini or fettuccini with choices of basil marinara, Diablo or Alfredo – all accompanied with custom-selected garnish items like pine nuts, mushrooms, pecans or walnuts.

Along with the pizza, flatbreads, fresh-baked bread and pasta selections, ETSU students will enjoy a daily themed dessert – like cannoli cake, panna cotta, tiramisu or biscotti.

Stacks Gourmet Deli

Stacks DeliFeaturing On-demand Limited Time Offers and Freshly Baked Breads.

Hot or cold, each of these perfectly composed sandwiches will be prepared with love, using quality deli meats and cheeses, nestled on freshly baked artisan breads. Some menu items include the classic Tennessee club, the Veggie Monster, deviled egg muffuletta and a no-mayo Mediterranean tuna sandwich to name a few. Sauces like honey mustard, ranch or chipotle aioli will be featured daily.

To keep this dining concept interesting, we will run Limited Time Offer specials – for example, lasting the weekend starting all day Friday – depending on ETSU student demand. Additionally, freshly baked breads in a new proof and bake oven in the deli area will be featured daily for student and guest enjoyment.

Fresh from the Fields

The fresh-from-the-market style of dining is what makes Fresh from the Fields so special. ETSU diners will be delighted by the vast selection of fresh salad and market selections: a bountiful salad bar with an assortment of fresh seasonal greens, veggies and fruits – including those locally sourced from Johnson City and nearby Tennessee farms whenever available. With a variety of customizable entrées and pre-made, packaged daily selections, Fresh from the Fields will add variety and excitement for ETSU students, faculty and staff alike. These delicious salads will be tossed to order with freshly-sautéed and sizzling proteins directly in front of students.

Crunchy croutons, delicious toppings – like feta cheese, steamed edamame, hard boiled eggs and mushrooms, – homemade dressings – like Tabouli, Caesar and Italian – and an expanded noodle variety – like ramen, udon or soba – will add the perfect finishing touch to any meal.

Basil

Basil LogoYour Vegan, Vegetarian and Gluten-free Dining Station Featuring an EVO Grill.

Specially chosen dishes offered at Basil will make it a favorite for ETSU vegan, vegetarian and gluten-free students. Although vegan and vegetarian options will be available in other dining formats across your campus, The Market Place, Basil will be dedicated to meeting these dining preferences. Featuring hearty entrees like eggplant carbonara, griddled sandwiches and quinoa primavera, along with flavorful accompaniments like bulgur wheat salad and black bean stew, Basil is sure to be a favorite among students with special dietary needs, as well as those looking to try new flavors.

Soups and Chili

Fresh-made soups warm the stomach as well as the heart – hearty, distinctive and created to meet the various dietary needs for the ETSU campus community. Each day, ETSU students will find an enticing selection of vegetarian and protein-based soups and chili from which to choose.

Look forward to delicious soup du jour specials like Chinese Hot and Sour or broccoli cheddar soups along with a daily selection of zesty thick chili topped with homemade jalapeno cornbread croutons.

Beverages

Of course, no meal is complete without the right beverage. Your new dining program will include them all. A Starbuck’s drip coffee and espresso machine will be available for students to enjoy their favorite bres, a slush machine and a tea tower presenting an assortment of green and black teas will accompany a choice of milk (2%, skim, chocolate), sodas and juices to meet a wide variety of taste and dietary preferences. Aspretto – Sodexo’s unique ethical coffee and tea brand – will also be available.

Desserts/Bakery

Students looking for the perfect treat to end a meal – or just to satisfy their sweet tooth at any time of day – will find taste-tempting solutions ranging from freshly made pastries and muffins at breakfast time to homemade cookies, pies and cakes, cobblers and more at lunch and dinner. ETSU diners can look forward to delicious creations like carrot, zucchini, pumpkin and chocolate chip muffins to oatmeal and raisin, almond, walnut blondies and the classic chocolate chip cookies served warm – sometimes hot!

Outdoor Grill

When the weather is nice, ETSU students will love to head to the outdoor grill in The Market Place! Our chefs will prepare made-to-order burgers and sandwiches with your choice of protein and toppings, kabobs, quesadillas and hot dogs, side dishes and beverages. The outdoor grill will also serve hot, fresh and delicious limited time offers. Students who find themselves short on time will appreciate the convenience of certain selections wrapped and ready for their grab-and-go convenience.
